This unique geological composition imparts a clear mineral imprint and great precision to the palate. The interaction between Sauvignon Blanc and the local microclimate creates an authentic territorial expression, endowed with an ageing potential that can approach a decade.
How it is produced
The production process begins with the direct pressing of the grapes, an essential step to preserve the integrity and aromatic purity of the must. Fermentation takes place through a careful alternation of wooden vats, barrels and stainless steel tanks. This is followed by a prolonged ageing on fine lees, carried out mainly in barrels and steel, which gives greater depth and roundness to the final structure. This meticulous work enhances the natural liveliness of the grape variety without compromising its elegance. To fully appreciate its nuances, it is recommended to serve between 12 and 14°C.
