The Lamy family has cultivated these lands since 1640, although the Hubert Lamy winery was founded in 1973. Since 1995, the production approach has been further refined, enhancing the eighteen and a half hectares of estate-owned vineyards through meticulous management. The deep care for the terroir ensures an expressive clarity of the highest level, recognised by international critics with a score of 91/100 from Robert Parker.
How it is produced
Production exclusively values Chardonnay, vinified with the aim of achieving maximum aromatic purity. The skilful handling of the must seeks to preserve the integrity of the grape variety's distinctive floral character, consolidating a structured and always harmonious flavour profile. This careful technical approach defines an essential character that is true to its area of origin, capable of evolving masterfully over time and revealing an excellent ageing potential, which can extend from five up to ten years.
History and Curiosities
The winemaking history of the Lamy family in Saint-Aubin, Burgundy, boasts ancient roots dating back to 1640. The current estate was established in 1973 and reached its peak quality from 1995 onwards, thanks to innovations introduced by Olivier Lamy both in the vineyard and in the cellar. From its 18.5 hectares of selected vineyards comes the Saint-Aubin Blanc La Princée 2023, a refined still white AOC wine made from 100% Chardonnay grapes. This prestigious wine expresses the essence of the region and has been awarded 91/100 by Robert Parker.

Most of the development of the Domaine was during the 1990's when new vines were bought or rented (Clos de la Chatenière, Derrière Chez Edouard, Murgers des dents de Chien, Clos du Meix, Santenay Clos des Hâtes) or planted (En Remilly). Some parcels which were planted with Pinot Noir vines were changed to Chardonnay vines because it was considered this was a better choice for the soil type (La Princée).
Olivier Lamy, having first studied winemaking and commerce, joined the Domaine in 1995. Prior to joining his father he did training courses in several other Domaines and tasted wines from all over the world. With this experience he was able to bring new ideas and new methods of working in the vines and in the cellar.
Today the Domaine has 18.5 hectares of vines - 80 % in Chardonnay and 20 % in Pinot Noir. Read more
