Bourgogne Aligoté Les Chanterelles by Guy Bocard is an organic white wine with a pure profile, made from Aligoté grapes. On the nose, it offers clear aromas, characterised by notes of white flowers and lemon. On the palate, it displays marked energy, balanced by a pleasant structural roundness that brings harmony to each sip. Supported by a distinct mineral imprint, it finishes with a deep and fresh finale, making it ideal for pairing with seafood dishes and goat's cheeses with great precision of flavour.

Where it comes from

This white wine has its roots in the Bourgogne Aligoté area, in the Meursault sector, within the renowned Les Chanterelles plot. The vineyard benefits from a northern exposure and is set on clay-limestone soil, a key element in ensuring the pronounced freshness and clear minerality of the wine. The grapes come from old vines of around fifty years, which naturally produce low yields and notable aromatic concentration, giving the wine a character strongly tied to the identity of this specific vineyard.

How it is produced

Vinification begins with a careful manual harvest, followed by slow whole-bunch pressing to preserve the integrity of the must. Fermentation occurs spontaneously, triggered solely by indigenous yeasts. The maturation phase involves twelve months of ageing in barrels without new wood, a deliberate choice to maintain the purity of the fruit and avoid toasted notes. Ageing concludes with four months in stainless steel tanks, ensuring a clean, linear and vibrant aromatic profile.
