The low yields, with a strictly limited maximum production, ensure the grapes have remarkable aromatic concentration.
How it is produced
The agricultural management avoids chemical fertilisers in favour of organic matter only. In the vineyard, there is a rigorous shoot thinning and meticulous leaf removal. Fermentation lasts between four and six weeks, thanks to the action of indigenous yeasts that preserve the typical character of Sauvignon Blanc. The process concludes with a prolonged ageing on the lees until the spring months, a practice that develops the wine’s structure and volume, making its texture richer and deeper.
