Description

What type of wine it is

La Chapelle Pays d’Oc Chardonnay by Domaine de Tholomies is an organic, dry white wine that reflects the authentic character of the French Languedoc-Roussillon region under the Protected Geographical Indication. The blend, featuring Chardonnay and Viognier, offers an aromatic expression defined by pleasant notes of white-fleshed fruit and candied orange. Produced through skin maceration and ageing in barrels, its clear yellow colour offers a palate with a distinct fleshy presence. The final result is a well-balanced wine, capable of combining harmony and enjoyment in an accessible sensory profile.

Where it comes from

This white wine originates in the Pays d’Oc, within the Languedoc-Roussillon region of France. The vineyards thrive on limestone marl soils, a precious geological element that gives the wine its strong identity and a consistently well-proportioned structure. The influence of this terroir allows the grapes to be enhanced, resulting in a clean and consistent profile. The expression of the area of origin emerges through a dry character, aimed at maintaining a precise aromatic definition.

How it is produced

The process begins with careful hand-harvesting of the bunches, followed by skin maceration to promote optimal extraction. The wine then matures in wooden barrels for at least a year, an ageing process that defines its complex taste structure. This meticulous production, which respects vegan principles, results in a glass with vibrant fruity nuances.

The Domaine de Tholomies has a very rich and ancient history, thanks in particular to to the exceptional succession of owners through the centuries. The first traces visible from the Abbey of Tholomies are Roman. The discovery of a well in the wine storehouse at barrels testify to this. The Visigoths then occupied the site, around the 4th century.

A written document, dating from 977, attests to its existence and cites the "Domaine de Tolomiano" as property of the Viscountess of Narbonne. She then ceded it to the clergyman who completed the construction of the Abbey in the year 997. Religious wars dating back to of the beginning of the first millennium make the history of the estate a little murky, which is now under Cathar domination then Templar domination... The emblematic characters follow one another... over the centuries.
