Description
What kind of wine it is
The Pessac Leognan Grand Cru Rouge from Domaine de Chevalier is a red wine from the Bordeaux region, belonging to the Pessac-Léognan appellation, created from a blend of Cabernet Sauvignon, Merlot and Petit Verdot. On the nose, it offers a refined aromatic profile, characterised by notes of blackcurrant, floral hints, tobacco and graphite. On the palate, it is fresh and concentrated, supported by velvety tannins and well-balanced acidity. This wine pairs perfectly with strongly flavoured meats, game, and poultry enhanced with truffle, ensuring excellent balance on the palate.
Where it comes from
This wine originates in the Bordeaux area, within the renowned Pessac-Léognan appellation. The vines take root in a distinctive terroir composed of dark sand and fine white gravel, elements that contribute to its typical precision and elegance. Domaine de Chevalier, a historic estate now run by the Bernard family, benefits from the collaboration of Stéphane Derenoncourt to fully enhance the natural winemaking vocation of the area.
How it is produced
The production process begins with a meticulous triple selection of the grape bunches to select only the finest raw material. In the winery, fermentation in stainless steel at a controlled temperature preserves the purity and aromatic integrity. This is followed by a two to three week maceration on the skins to extract colour and define the structure. The process concludes with eighteen months of ageing, including a four-month period on the lees to give the wine further depth and complexity.

Archives from the 17th century show us that the small Domaine de Chivaley included "houses, outbuildings, gardens, grounds, vines, woods, and meadows." The term domaine, later replaced by château, originally had a wider meaning that has since disappeared. It referred to an ensemble, as at Chivaley, formed by a family residence and agricultural estate in which viticulture coexisted with other crops and breeding..." Read more
