Where it comes from
The roots of this cuvée lie in the heart of Champagne, with particular reference to the vineyards located in Cramant, Cuis and Épernay. The geological composition of the chalky soil, typical of the Côte des Blancs, is fundamental in giving the sip its natural gustatory tension. In these historically renowned lands, the vines draw essential elements that translate into a pronounced minerality in the glass. The careful selection of plots ensures grapes capable of expressing the purity of flavour, enhancing the specific characteristics of a unique and prestigious terroir.
How it is produced
Production follows a rigorous process that begins with vinification at low temperatures in barrels and temperature-controlled tanks, ideal for preserving the integrity of the varietal aromas. The prise de mousse takes place according to the principles of the Traditional Method, initiating a slow evolution. A prolonged ageing on the lees for three years enriches the structure of the wine, giving it a pleasant softness that perfectly balances the acidic freshness. Excellent served chilled, it favours refined seafood pairings such as shellfish, molluscs and delicate fish, and also proves excellent with fine cheeses.

Since 1959, the expertise of Jack Diebolt and his children Arnaud and Isabelle has given life to this precious non-vintage Champagne. Patiently aged for three years on the lees, this elegant traditional method fully expresses the authentic minerality of the chalky soils. Named “Producer of the Year” in 1992, the Maison guarantees a memorable sip, widely praised by the finest international critics.

Diebolt-Vallois champagnes are the progeny of a united family:
Jacques Diebolt and Nadia Vallois are helped by their two children, Arnaud and Isabelle, who are taking an ever increasingly active part in the running of the estate.
The Diebolt family has lived in Cramant since the end of the 19th century, and the Vallois family has been cultivating vines in Cuis since the 15th Century. Although Jacques Diebolt started working with his grandfather, it was not until 1978 that the estate underwent a sea-change with the extension of the estate and the construction first of all of cellars, and then a winery.
