Style of wine
Coyam is a biodynamic and organic red wine produced by Emiliana, one of the most representative expressions of the Colchagua Valley in Chile. This enveloping red blend is born from the union of Syrah, Carménère, Cabernet Sauvignon, Carignan, Grenache, Mourvèdre, Petit Verdot, Malbec and Tempranillo grapes. To the eye, it presents a deep ruby-red colour, which precedes an intense bouquet of cassis and forest fruits, enriched by hints of toasted black pepper. On the palate, it expresses a full-bodied structure and velvety tannins, closing with a persistent finish that reveals the elegant influence of the wood.
Origin
Coming from the vineyards of the Los Robles estate, situated in the Colchagua Valley with contributions from the Maipo Valley, this wine reflects a deep respect for the terroir. Here, the principles of organic and biodynamic agriculture are adopted, with the aim of preserving local biodiversity. The deliberately low yields guarantee an optimal concentration and a vibrant expression of the fruit. The unique ecosystem of these fertile valleys gives the wine an intense aromatic profile and precise varietal definition, outlining a bold character in perfect harmony with the natural environment.
How it is produced
Winemaking begins with a strictly manual harvest and a meticulous selection of the bunches. In the cellar, the must is moved using a delicate gravity-fed system. After cold maceration and temperature-controlled fermentation in steel, malolactic fermentation takes place in wood. This is followed by twelve months of ageing in French and American oak barrels, a fundamental step that smoothes the tannic texture and enhances the spicy notes. The result is a wine of great balance, ideal for accompanying structured red meats, game and mature cheeses.
