How it is produced
Production begins in the second half of September with manual harvesting and the subsequent gentle pressing of the destemmed grapes. To preserve the purity of the primary aromas, fermentation takes place in stainless steel tanks at a controlled temperature for a period of eight to ten days. The wine then matures in steel for three months, concluding the process with a brief final rest. Careful technical management enhances the natural freshness of the sip, making it the ideal pairing for classic Italian cuisine, from delicate risottos to white meats.
