What type of wine it is
Conzal Trentino Nosiola is a white wine with a controlled designation of origin produced by Cavit through the vinification of Nosiola grapes. This expression from Trentino is distinguished by its straw-yellow colour with greenish hues. On the nose, it offers a scent of white flowers intertwined with delicate notes of apricot and green apple. Fermented and aged in stainless steel, it is dry and pleasantly fresh on the palate, supported by a good sapidity that pairs perfectly with lean fish dishes, delicate starters and non-smoked cured meats.
Where it comes from
The vineyards are located on the hills of Calavino, along a glacial ridge divided into small terraces supported by dry-stone walls, known locally as “fratte”. Situated at three hundred and fifty metres above sea level, the plants enjoy a constantly breezy climate and sink their roots into deep limestone and marly soils. Grown using the Trentino pergola system, these thirty-year-old vines enhance the elegance of a historic grape variety, present in the region since the time of the Council of Trent.
How it is produced
The process begins with a careful selection of the bunches, which undergo a light maceration and soft pressing. This delicate approach ensures the optimal extraction of the aromatic components. Fermentation in stainless steel takes place at a controlled temperature, preserving the integrity of the must. The wine completes its journey with six months of ageing in the same vessels, followed by a cold stabilisation that defines its clean and linear structure.
History and curiosities
Cultivated since the time of the Council of Trent, Nosiola is Trentino’s only indigenous white grape variety. This variety thrives in the constantly breezy climate of the Calavino hills, giving rise to the elegant Conzal Trentino Nosiola DOC. The name of the selection pays homage to the ancient traditional vats, whilst that of the grape variety recalls the delicate nuances of hazelnut.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
