Description
What kind of wine it is
The Cuvée Cépage Pas Dosé by Conte Vistarino is a rigorous Traditional Method sparkling wine with a structured profile. Created through a careful blend of Pinot Noir and Chardonnay, it appears in the glass with a delicate pale onion skin hue, enhanced by coppery highlights and a fine perlage. The aromatic bouquet is rich, revealing precise notes of rose and small red fruits. On the palate, it offers a dry and fresh sip, pleasantly full, characterised by hints of currant and wild strawberries that lead to a silky, clean finish.
Where it comes from
This Quality Sparkling Wine is produced in Rocca de’ Giorgi, in the heart of the Oltrepò Pavese, a Lombardy region with a centuries-old winemaking tradition. The Conte Vistarino winery enhances these lands by obtaining grapes with marked freshness, a quality recognised by the four bunches in the Bibenda guide. Thanks to its great balance, this wine harmoniously accompanies the entire meal. Its lively tension pairs perfectly with fish dishes, shellfish and cheeses, making it an excellent choice also as an aperitif.
How it is produced
Cuvée Cépage Pas Dosé is produced following the Traditional Method, a technique involving secondary fermentation in the bottle. The decision to create a zero dosage sparkling wine allows the authentic essence of the grape varieties to shine, ensuring a taut and vibrant flavour profile. The absence of added sugars enhances the natural freshness, maintaining a full and consistent sip. This meticulous production process guarantees excellent integration of carbon dioxide, giving the wine a persistent mousse and an enveloping texture.

Carlo Giorgi di Vistarino introduced the pinot nero grape to the Oltrepo Pavese between the end of the 19th century and the beginning of the 20th century, going on to win awards in both London and Paris for the sparkling wines thus produced. His work was taken further by Ottaviano and Carlo, and is today in the hands of Ottavia Giorgi di Vistarino.
