How is it produced
After harvesting and destemming, production continues with a strict exclusion of acidification and tannin additions. The must is macerated in open vats, while the subsequent fermentation lasts for fourteen days, activated by indigenous yeasts and managed through precise punching down and pumping over. This essential process purely enhances the fruity profile of the grape variety. At the table, its flavourful texture pairs beautifully with dishes such as beef fillet or a fine wild salmon.
