Description
What kind of wine it is
Ciavolich Montepulciano d’Abruzzo Fosso Cancelli is a still red wine that expresses the character of the Montepulciano grape variety. This organic wine, a true expression of the Montepulciano d’Abruzzo area, presents a deep ruby red colour with violet highlights. The aromatic profile reveals notes of red fruit and flowers, enriched by hints of black pepper, liquorice, chocolate, tobacco and balsamic nuances. On the palate, it offers a full body, warm and enveloping, characterised by a soft and evolved tannic structure that ensures a long and persistent finish, ideal for pairing with red meat dishes, pork and mature cheeses.
Where it comes from
This red wine originates from Loreto Aprutino, in the province of Pescara, one of the most renowned areas for Abruzzo viticulture. The grapes come from a specific area bordered by a ditch, from which the wine takes its name. The bunches ripen on old vines over forty years old, trained using the traditional pergola system. The roots penetrate soils that blend calcareous clay and silty-clay fractions, giving the harvest concentration and finesse. This perfect pedoclimatic synergy of the Abruzzo terroir allows for the production of high-quality grapes, capable of reflecting the authentic identity of the place in a deep and structured sip.
How it is produced
The production process is meticulous and sustainable, beginning with a manual harvest carried out at the end of October to carefully select the bunches. This is followed by spontaneous fermentation in cement vats with indigenous yeasts, following practices reminiscent of traditional local methods. The wine is not clarified or filtered to preserve its natural integrity. After maturing for about a year and a half, the process concludes with ageing for at least three years. This prolonged rest ensures harmonious evolution, softening the tannins and perfectly defining the overall structure of the wine.
