Where it comes from
This sparkling wine originates in Lombardy, in the Franciacorta region. The vineyards are located in a valley of ancient formation, characterised by the presence of underground aquifers. The soil consists of limestone rocks resting on a solid clay substrate. This geology gives the grapes a marked acidic backbone, imparting a distinct minerality to the wine. The deep connection with the land ensures a consistent profile and remarkable ageing potential.
How it is produced
After destemming, the Pinot Noir grapes undergo a six-hour skin maceration to extract the delicate pink hue. The must ferments spontaneously in cement tanks for twenty days thanks to the action of indigenous yeasts. After a period of rest in cement, the wine begins its secondary fermentation following the Traditional Method. Ageing on the lees for at least forty-eight months imparts an elegant complexity to the palate. At disgorgement, no dosage is added, using the same wine to preserve absolute dryness and savouriness.

These soil characteristics combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. Conventional agricultural tools such as weed killers or pesticides are not used.
