Levis Rosé Dosage Zero by Cherubini is a sparkling wine produced using the Traditional Method. It is made from Pinot Noir grapes cultivated with an approach aimed at enhancing the purity of the fruit. Characterised by a pale pink colour, it offers an aromatic profile marked by evolved and tertiary notes. On the palate, freshness and balance blend with a pronounced minerality. This dry, vibrant rosé is ideal for accompanying starters, cheeses, and lean fish dishes.

Where it comes from

This sparkling wine originates in Lombardy, in the Franciacorta region. The vineyards are located in a valley of ancient formation, characterised by the presence of underground aquifers. The soil consists of limestone rocks resting on a solid clay substrate. This geology gives the grapes a marked acidic backbone, imparting a distinct minerality to the wine. The deep connection with the land ensures a consistent profile and remarkable ageing potential.

How it is produced

After destemming, the Pinot Noir grapes undergo a six-hour skin maceration to extract the delicate pink hue. The must ferments spontaneously in cement tanks for twenty days thanks to the action of indigenous yeasts. After a period of rest in cement, the wine begins its secondary fermentation following the Traditional Method. Ageing on the lees for at least forty-eight months imparts an elegant complexity to the palate. At disgorgement, no dosage is added, using the same wine to preserve absolute dryness and savouriness.

From this winery
The Cherubini farm is located beyond the borders of eastern Franciacorta, immersed in a natural park in the Brescia hills, a few kilometers from the city center. In this valley there is a terroir of millenary formation with underground aquifers and rocks rich in limestone with a clayey substrate.

These soil characteristics combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. Conventional agricultural tools such as weed killers or pesticides are not used.

The agricultural and winemaking philosophy is aimed at intervening as little as possible both in the vineyard and in the cellar, hence the choice to produce classic methods with Zero Dosage with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin.
