How it is produced
Production begins with a rigorous manual harvest, during which the bunches of the different varieties are selected and picked separately. In the winery, the pursuit of maximum aromatic expression involves an eight-hour skin maceration, delicately extracting colours and aromas. Only the free-run juice obtained at the end of this contact is used, which is then clarified by decantation. The process concludes with a partial malolactic fermentation, a technical choice that allows the structure and acidity to be balanced, making the sip smooth while preserving the wine’s characteristic freshness.
