This particular geological composition provides the ideal habitat for the old vines, which reach an average age of about sixty years. The low yields ensure the wine has remarkable territorial expression and extraordinary concentration.
How it is produced
The production process begins with a mechanical harvest, aimed at preserving the integrity and optimal ripeness of the fruit. Subsequently, the wine is aged for over sixteen months in new and second-use oak barrels. This prolonged maturation shapes the wine’s structure and melds the spicy and toasted notes without ever overpowering the fruity character. The result is a solid and precise profile, ideal for pairing with roast red meats, rich braised dishes and game.
