How it is produced
The production process begins with an autumn harvest carried out in October, divided into several stages to follow the natural ripening rhythms of each plot. To fully appreciate its balance and complexity, it is recommended to decant for one hour before serving, at a temperature between sixteen and eighteen degrees. Its aristocratic texture makes it ideal for structured pairings, harmoniously accompanying dishes based on beef, pork and mature cheeses.
