Where it comes from
This elegant red originates in Veneto, in the heart of Valpolicella, from vineyards located in the Fumane area. Produced by Cesari, the wine enhances the unique qualities of the Veronese region, an area highly suited to quality viticulture. Careful agronomic management reflects the desire to highlight the natural inclination of the soil, ensuring ideal raw material to achieve pronounced aromatic intensity and a balanced taste consistency.
How it is produced
The process begins with thinning of the grape clusters and an extended ripening period until the end of October. After harvesting, the grapes undergo drying in crates for twenty days to concentrate aromas and flavours. This is followed by a fermentative maceration of the same duration and complete malolactic fermentation. Ageing takes place in French barrels for eighteen months, followed by a further six months of blending in barrel and a final period of rest in the bottle.
