Where it comes from

This label originates in Healdsburg, California, within the renowned Sonoma Valley denomination. This red is produced by Ceritas, a small family-run business that works with dedication on small plots. The agronomic approach focuses on essential and rigorous viticulture, aimed at enhancing old, low-yield vineyards capable of delivering high aromatic concentration. This careful work in the vineyard allows for a fresh and elegant profile, strongly linked to the natural environment.

How it is produced

The processing of Pinot Noir follows meticulous practices, designed to preserve the integrity of the fruit and the natural vitality of the grape. In the cellar, the processes respect the varietal characteristics, keeping the delicate olfactory nuances and the dense flavour texture intact. To fully appreciate its complexity, it is recommended to decant for about an hour, a step that encourages optimal opening. Served at a temperature between 18 and 20°C, it pairs perfectly with structured menus. Among the ideal pairings are flavourful first courses, dishes based on game or pork, and mature cheeses.

From this winery
Located in Healdsburg, in the heart of the Californian wine country, Ceritas Wines is a small but beautiful "family" run business run by John Raytek and Phoebe Bass.

Simplicity is John and Phoebe's favorite word to describe their approach to viticulture; it is here that man before acting learns to listen to the vineyard. This is the case in the cellar, where no dogmas or particular methods are followed, but rather where the work is carried out according to the following methods The right amount of flexibility is added to the traditional ones.

Particular attention is paid to the enhancement of old vineyards naturally predisposed to confer low yields. Ceritas works small plots from the denominations of Sonoma Coast and Santa Cruz Mountains where the Pinot Noir and the Chardonnay give wines of great expressiveness, freshness and elegance.
