This method encourages a light mousse, which appears in a lively structure with balanced sweetness. The estimated longevity ranges from three to five years. To best appreciate its qualities, a serving temperature between 10 and 12 °C is recommended. At the table, it pairs beautifully with spoon desserts, fruit tarts and dry pastries, while its liveliness elegantly contrasts with the savouriness of cheeses.

The Ceretto winery was founded in the 1930s: Riccardo Ceretto, who did not own any vineyards, produced wine from grapes he purchased. The turning point came when his sons Bruno and Marcello joined the business, with their innovative thinking for the time: the importance of the soil.
