What kind of wine it is
Cum Vineis Sclavis by Cavit is a still red wine, an authentic expression of Trentino, created to enhance the livelier character of Schiava grapes. In the glass, it displays a bright ruby red colour, heralding a bouquet dominated by inviting notes of cherry and raspberry. On the palate, it offers a dry, dynamic and easy-drinking sip, finishing with the typical slightly bitter almond note. The tasting faithfully reflects the natural freshness and immediate appeal of the grape variety.
Where it comes from
The grapes come from the vine-covered hills of the Adige Valley and the Valley of the Lakes, located in specific foothill areas. The vineyards grow between 250 and 350 metres above sea level, ensuring the development of clear fruit and well-defined freshness. The name Cum Vineis Sclavis derives from the medieval rural practice of tying vines to rigid supports to organise the rows, a historical custom at the heart of the local variety's identity. A deep territorial connection thus takes shape through a linear and straightforward glass.
How it is produced
After careful selection, the grapes are crushed and fermented at a controlled temperature, with a gentle maceration on the skins for about seven days. Maturation takes place in stainless steel tanks and concrete vats on fine lees, a technique specifically chosen to preserve the original aromatic profile. With a minimal residual sugar content, this smooth-profiled red expresses its fragrance best when consumed young, making it the ideal pairing for medium-aged cured meats and cheeses, vegetable-based first courses and white meats.

Today, Cavit pays homage to this ancient grape variety with a traditional red vinification and a seven-day maceration. Maturation in steel and concrete on fine lees preserves its natural freshness, offering a glass with a brilliant ruby red colour, enhanced by fragrant aromas of cherry and raspberry.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
