What kind of wine it is

Langhe Freisa by Cavallotto is an organic still red wine that expresses the soul of Piedmont through the pure vinification of the Freisa variety, with spontaneous fermentation and ageing in Slavonian oak barrels. The sensory profile opens with an intense bouquet featuring aromas of red fruits, particularly cherry and strawberry, enriched by floral notes of violet and spicy hints of black pepper and liquorice. On the palate, it is fresh and vibrant, supported by a solid structure and a silky tannic texture. With aeration, delicate hints of aromatic herbs and undergrowth emerge, accompanying the sip towards a harmonious, long and pleasantly dry finish.

Where it comes from

This wine originates in the Langhe, within the Piedmontese municipality of Castiglione Falletto. The grapes grow in the Vigna Freisa, a plot located in the renowned Bricco Boschis cru. The unique characteristics of the soil in this subzone give the sip a lively and juicy flavour profile. The deep connection with the territory is revealed through clear aromas and a solid balance between freshness and structure, offering an authentic interpretation of the Freisa variety.

How it is produced

The production process involves spontaneous fermentation carried out by indigenous yeasts and a semi-submerged cap maceration to optimise extraction. Ageing takes place in traditional Slavonian oak barrels, allowing the wine to evolve while fully respecting the identity of Freisa. This is followed by a six-month rest, essential for stabilising the organoleptic components. Such care ensures a long finish with notes of morello cherry and excellent ageing potential, allowing the wine to mature positively for over eight years.

Freisa is an indigenous Piedmontese grape variety historically related to Nebbiolo. As a point of interest, this wine is produced with the same meticulous care and strict standards that the estate applies to its great Barolo crus, in order to enhance the natural vitality and straightforward character of the variety.

At the gates of Castiglione Falletto, in the heart of the Barolo Zone, on the slopes of the Bricco Boschis, one finds the Cavallotto Winery, which lies on 25 hectares of land. Since 1928, the Cavallotto family has owned the estate Tenuta Bricco Boschis. In 1946, they were the first cultivators in Castiglione Falletto to vinify all of their estate’s fruit. In 1948 they released the first bottling of their own BAROLO wine, with the label and registered trademark of Cavallotto.

Today the children of Olivio – Laura, Giuseppe and Alfio, the 4th generation working the family farm – continue to exclusively vinify the grapes produced in their estate vineyards into DOC and DOCG wines: Barolo, Dolcetto d’Alba, Barbera d’Alba, Langhe Nebbiolo, Langhe Freisa, Langhe "Grign" made from Grignolino grapes, Langhe Chardonnay and "Pinner" made from Pinot Nero grapes.
