How it is produced
Vinification begins with a 12-15 day maceration, essential for extracting colour and aromatic components. Alcoholic fermentation takes place in stainless steel tanks to preserve the varietal freshness of the must. Subsequently, the wine undergoes malolactic fermentation in large French oak barrels, acquiring softness and complexity. The maturation period includes eight months of ageing in large barrels, followed by a further eight months of rest. The result is a wine of full body, ideal for elegantly accompanying roasted red meats, boiled meats and mature cheeses.
