Le Ginestre by Castellare di Castellina is a white wine with a typical geographical indication from Tuscany, created from an elegant blend of Sauvignon Blanc and Chardonnay and vinified in stainless steel. The bouquet reveals notes of yellow peach, boxwood and elderflower, combined with gooseberry and vanilla. On the palate it is smooth, with a balanced structure and vibrant savouriness. Perfect with seafood risottos or white meats, it also pairs beautifully with Tuscan cured meats.
Where does it come from
This white wine originates in Castellina in Chianti, Tuscany, from vines cultivated without the use of chemical products. The vineyards, situated between 350 and 400 metres above sea level, rest on calcareous-clay soils. This territorial combination, together with Guyot training and low yields, encourages the ripening of the grapes and ensures the wine has remarkable aromatic tension.
How is it produced
The grapes, harvested at the end of September, are vinified in stainless steel tanks at a controlled temperature to preserve the primary aromas. To guarantee a linear drinkability and a pronounced acidic backbone, malolactic fermentation is not carried out and no barrels are used. The process concludes with a bottle ageing of four months, ideal for merging smoothness with freshness and enhancing a savoury and delicate profile.
