Description
What kind of wine it is
Barolo from the Municipality of Monforte d’Alba by Cascina Sot is a full-bodied red wine, made exclusively from Nebbiolo grapes grown in Piedmont. This expression of Barolo with Denomination of Controlled and Guaranteed Origin, vinified in steel and aged in large barrels, offers a deep sensory profile, designed for long ageing over time. The bold character of this wine makes it ideal for pairing with dishes of intense flavour, such as game and mature cheeses. To fully appreciate its nuances, it is recommended to decant for about an hour and serve at a temperature between 18 and 20°C.
Where it comes from
The roots of this wine lie in the Municipality of Monforte d’Alba, one of the most renowned areas of Piedmont. Its origin in this specific area gives the wine a distinctive identity. The vines are cultivated using the Guyot espalier system, ideal for ensuring optimal development of the grape clusters. This particular territory precisely defines the rigorous style that characterises Barolo.
How it is produced
After the harvest, which takes place in the second or third decade of October, vinification is carried out in steel with the cap emerged. The twenty-day maceration takes place at a controlled temperature, accompanied by daily pumping over and manual punching down for optimal extraction. The long ageing process involves thirty-two months of rest in large Slavonian oak barrels, followed by a further six months of maturation before release, to ensure perfect balance of the wine.
