Where it comes from
The grapes are grown in the renowned hillside vineyards surrounding Lake Caldaro, at an altitude between 350 and 450 metres. The vines benefit from south and east-facing exposures, enjoying a mild Alpine climate with plenty of sunshine, providing optimal conditions for regular ripening. The soils, composed of calcareous clay and gravel, are well-drained and give the wine its typical mineral character. In this region, Kellerei Kaltern has cultivated Sauvignon Blanc with a historic dedication dating back to the early twentieth century, enhancing the pure expression of the terroir.
How it is produced
Production begins with the harvest of perfectly ripe bunches. After destemming, the must undergoes a period of cold maceration for about eight hours, an essential phase to extract the full aromatic intensity. Gentle pressing and natural settling precede temperature-controlled fermentation in stainless steel tanks. To enrich the structure without altering the varietal purity, the wine matures for four months on the fine lees in steel, gaining breadth and roundness. This technical choice ensures a clear aromatic profile and great palate cleanliness.
