Description
What kind of wine it is
The Moscato Canelli Sant'Ilario by Ca' d'Gal is an aromatic sweet white wine from Piedmont, made from Moscato Bianco grapes. Belonging to the historic Asti denomination, this wine stands out for its fresh style, where the fruit's natural sweetness finds a perfect balance thanks to a vibrant acidity and a creamy perlage. The sensory profile is elegant, characterised by clear fruity hints of yellow peach and apricot interwoven with delicate notes of sage, and is supported by careful autoclave processing designed to enhance the varietal aromatic expression.
Where it comes from
The grapes intended for this production come from the renowned Piedmontese area of Canelli, more specifically from the limited plots of Brichet and Valdivilla. In this area, precious seventy-year-old vines take root in soils composed of white marl and blue clay. The vineyards are located at an altitude of four hundred metres, benefiting from a cool north-east exposure. This specific microclimate, combined with the rigorous classic Guyot training system, ensures balanced yields and contributes to giving the bunches a vibrant freshness and a precise territorial identity.
How it is produced
The winemaking begins in mid-September with a manual harvest, followed by a soft pressing of the bunches conducted in the presence of dry ice, an essential technique to protect the delicate primary aromas from oxidation. The must is then transferred to stainless steel autoclaves, where it rests for a long time in close contact with the lees, kept at a temperature of zero degrees until the arrival of spring. Subsequently, a slow fermentation at a controlled temperature is triggered, which encourages the delicate sparkle. The production cycle concludes with targeted bottle ageing, which continues until the autumn of the year following the harvest to fully harmonise the structure.

The marriage of tradition and new experiences comes from the stories and memories of my father, specifically a dinner with some friends, the "seigiornisti" by Giacomo Bologna.
During that evening, as always relaxed and friendly, they told their stories, retracing their memories and different harvests. It was at that moment as I listened to them, I suddenly found myself thinking that those memories could become reality again. It was that night that I decided exactly which vineyards could fulfill my dream: the vineyard of Mr. Pierino Valdivilla and Brichet would become the "Vigna Vecchia" from Ca ‘D’ Gal .
From that long ago moment in 1990, the road has been long, intense and full of trials and research, testimonials and confirmations but today, tasting our wines, visiting the winery or by sitting with us at the table in our agritourismo, you will find all these experiences and the understand of our history .
