This elegant Traditional Method sparkling wine is created from a carefully crafted blend of Chardonnay, Pinot Blanc and Pinot Noir grapes. On the palate, it is dry and very fresh, offering a sip with a full and pure flavour. The complex aromatic structure is characterised by intense and juicy aromas, leading to a clean and lingering finish, ideal when paired with shellfish and lean fish.
Where does it come from
This Franciacorta originates from the hills of Lombardy, among the historic towns of Erbusco, Adro and Passirano. The grapes come from a vast mosaic of vineyards: one hundred and twenty-five plots are dedicated to Chardonnay, twenty-one to Pinot Noir and three to Pinot Blanc. The average age of the vines, around twenty-one years for Chardonnay and Pinot Noir and twenty-eight for Pinot Blanc, ensures remarkable expressive depth. This careful selection of grapes enhances the subtle microclimatic differences, defining the vibrant freshness and intense structure of this Lombard sparkling wine.
How is it produced
Production begins with meticulous hand harvesting, followed by a system for washing and drying the bunches. Pressing takes place in total absence of oxygen, while the base musts ferment in stainless steel tanks. After the necessary months of clarification, the wines are expertly combined in the final blend. The prolonged ageing includes maturation on the lees for at least ten years, an essential requirement for the R.S. designation, meaning Recently Disgorged. Finally, disgorgement without oxygen, carried out using a patented system, prevents oxidative shock and preserves the integrity of the wine.
