The winery chooses not to use invasive oenological corrections, such as chaptalisation or acidification. The wine is finally bottled without filtration or fining, preserving the purity and complex nature of the raw material.

The company cultivates Meursault and Meursault Premiers Crus on soils with very different climates, which allows to produce a complex mixture of cuvée, "vieilles-vignes" of Meursault and to isolate particular vintages such as Tessons in a village and Charmes, Cras, Bouches-Chères and Goutte d'Or in premiers crus. The very old vines - aged between 30 and 90 years - are naturally not very productive and allow to obtain, after the vinification and refinement, very concentrated wines destined to a long aging.
