What kind of wine it is
This still white wine by La Soufrandière embodies the essence of the Saint-Véran appellation. Made from Chardonnay, it stands out for its bright straw-yellow colour. On the nose, it reveals clear floral aromas that lead into an enveloping palate. The sip is full-bodied, long and complex, highlighting the qualities of an organic wine with excellent structure, destined for an elegant evolution over time.
Where it comes from
The Les Combes Desroches cuvée originates at the foot of the Roche de Vergisson, in Burgundy. The vineyards grow on a slope with northern exposure at an altitude of 250 metres, benefiting from a cool microclimate ideal for the perfect ripening of the grapes. The soils, composed of marl and clay, combined with limestone and red iron oxide, give the wine breadth, vigour and a deep connection to its place of origin.
How it is produced
Production begins with meticulous manual harvesting, aimed at preserving the quality of the fruit. The must is obtained by pressing whole grapes before the vinification stage. Maturation takes place in oak barrels for 11 months, a process that completes the structure of the sip. This ageing imparts volume and enhances the aromatic complexity, always respecting the natural balance of the grape variety.
