How it is produced

Vinification involves a maceration on the skins for about twenty-five days and fermentation at a controlled temperature. Ageing takes place for eighteen months in French barrels, half new and half second passage, an essential process to soften the wine's intense structure. After a further year of bottle ageing, the profile gains complexity, making it an ideal accompaniment for game, braised meats and mature cheeses.
