What kind of wine it is
Bottega Vinai Merlot is a still red wine by Cavit, an authentic expression of Trentino. In the glass, it displays an intense ruby colour with garnet highlights, which heralds an enveloping aromatic profile. The bouquet ranges from notes of red fruits such as plum, blueberry, blackberry and raspberry, to hints of vanilla derived from the wood. On the palate, it reveals a balanced structure, where the full-bodied sip meets the softness of sweet tannins, offering a persistent and highly harmonious aftertaste.
Where it comes from
The roots of this red wine lie in the mountainous terroir between the hills of Vallagarina and the surroundings of Trento. Here, the sub-continental climate ensures optimal ripening of the Merlot grapes. In Vallagarina, the vines thrive on calcareous soils formed by deposits from ancient streams, well-structured and rich in clay. Around Trento, the vineyards are located on glacial and morainic terraces, characterised by deep, well-drained soils. This combination provides the ideal environment for the development of a complex aromatic profile.
How it is produced
Harvesting takes place at the end of September, with careful selection of fully ripe bunches. Fermentation occurs in contact with the skins for about two weeks in stainless steel containers at a controlled temperature. The wine then matures in French oak barrels and rests for a short period in Slavonian oak barrels, harmoniously integrating the fruit and aromas. At the table, it is the perfect companion for game and mature cheeses, as well as enhancing classic red meat dishes.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
