Its pronounced savouriness and fresh persistence make it perfect paired with white fish dishes, such as sea bass baked in a salt crust, but it can also elegantly accompany the intensity of blue cheeses whenever a harmonious balance is sought.

This wine originates in Friuli-Venezia Giulia, in the Venezia Giulia denomination area, faithfully reflecting the style of Bosco del Merlo. The winery operates with full respect for the environment, offering a organic and sustainable product, ideal even for those following a vegan diet. The name Iside is a tribute to the ancient Egyptian goddess of fertility and rebirth, symbolising the deep connection between vineyard work and the care for the surrounding nature.
How it is produced
The Ribolla Gialla grape bunches are harvested during the coolest hours of the day to preserve the integrity of the primary aromas. After a brief maceration, the must is separated from the skins through gentle pressing. Fermentation in stainless steel takes place at controlled temperatures, followed by a prolonged ageing on the lees before bottling, a process that gives the wine structure and complexity. To best enhance its sensory profile, the recommended serving temperature is around 10-12 °C.

The Bosco del Merlo estate winery started up in 1977 in Annone Veneto, founded by siblings Carlo, Lucia and Roberto Paladin. Thanks to a profitable collaboration with the Istituto Sperimentale per la Viticoltura di Conegliano, a careful and modern zoning technique was immediately implemented in order to get the best out of the terroir, working the vineyard piece by piece. In the nineties, in the small town of Lison di Portogruaro, the cradle of viticulture in this wine-making region, a further 50 hectares of land was acquired, which therefore doubled capacity, increasing it to around 100 hectares in total.
Over the course of the years Bosco del Merlo has benefited from the advice of famous oenologists and experts from the Faculties of Oenology and Agriculture in Padua and Milan, such as Franco Bernabei and Leonardo Valenti, in its quest to find the most forward-thinking solutions for achieving optimal quality with the lowest environmental impact.
