Description
What type of wine it is
Billecart Salmon Champagne Grand Cru Blanc de Blancs Extra Brut is an elegant white wine from the famous Billecart-Salmon winery, belonging to the Champagne Grand Cru appellation and classified as Extra Brut. Produced exclusively from Chardonnay grapes, this wine, crafted using the Traditional Method, offers clear aromas of citrus, white-fleshed fruit and subtle notes of brioche. The style is characterised by a distinct freshness and a decisive chalky minerality, balanced by a pleasant smoothness, naturally introducing the characteristics of the terroir and making it ideal for shellfish and lean fish.
Where it comes from
The grapes destined for this label come from the renowned French wine-growing region of Champagne. Specifically, the vineyards are located within the prestigious Côte des Blancs, a sub-region famous for its ideal pedoclimatic conditions for growing Chardonnay. The bunches are carefully selected from the five historic Grand Cru communes of the area, namely Avize, Chouilly, Cramant, Mesnil-sur-Oger and Oger. The conformation of this specific territory, combined with soils rich in chalk, contributes decisively to sculpting the distinct savoury character and the great elegance of the wine, ensuring excellent raw material for the subsequent stages of production in the cellar.
How it is produced
The production process begins with the delicate vinification of individual batches in dedicated vats. During this phase, the winery carries out partial malolactic fermentation to balance the natural acidity of the must while preserving its vibrancy. Subsequently, the base is created through a careful blend of two different vintages, thus ensuring consistent quality and greater aromatic depth. The secondary fermentation and re-fermentation in the bottle strictly follow the principles of the Traditional Method. The wine then matures for a long time on its lees in the cellars for a period of between four and five years, fully developing its characteristic tactile creaminess, before completing the cycle with the final dosage.
History and Curiosities
