How it is produced
Vinification begins with fermentation in stainless steel at a controlled temperature. Afterwards, the Governo all’Uso Toscano technique is applied, triggering a refermentation by adding partially dried grapes to give greater body and complexity. The process continues with ageing on the lees for about six months, ideal for enhancing the roundness and velvety texture. Finally, a period in wooden barrels completes the process, giving the wine impeccable balance.
