Cuvée Aurora Alta Langa by Banfi is a Classic Method Extra Brut sparkling wine from Piedmont, created from a harmonious blend of Pinot Noir and Chardonnay. In the glass, it stands out for its bright straw yellow colour with a fine and persistent perlage, while the bouquet is fragrant, characterised by clear notes of bread crust, yeast and hints of vanilla. On the palate, it expresses fullness and savouriness, supported by a pleasant freshness that leads the sip towards a slightly bitter finish. Where it comes from
The origin of this wine lies in the hills of Alta Langa, a prestigious area of Piedmont that stretches across the provinces of Cuneo, Asti and Alessandria. In these areas, the cool and breezy climate ensures optimal ripening of the grapes, allowing the Pinot Noir and Chardonnay to develop a clear aromatic expression. The natural vocation of the territory gives the glass an impeccable balance between structure and acidity, delivering an authentic expression of the region with a dry and well-defined flavour profile.
How it is produced
After gentle pressing of the bunches, the must undergoes static decantation to clarify. The primary fermentation takes place at a controlled temperature in stainless steel tanks. The final blend acquires organoleptic complexity thanks to the addition of a selection of base wines aged in French oak barrels. The secondary fermentation in the bottle follows the rules of the Classic Method, requiring at least 40 months of ageing on the lees. The process ends with traditional remuage and disgorgement à la glace, meticulous procedures that ensure a dry and harmonious sip.
