What kind of wine it is
Aprimondo Appassimento Puglia is a still red wine by Caviro, created from a blend of Negroamaro, Merlot and Malvasia Nera. In the glass, it displays an intense violet colour and concentrated aromas of blackberries and ripe fruit. On the palate, it offers a robust and complex structure, revealing itself as savoury, balanced and with a persistent finish. If allowed to breathe for about an hour and served at 14-18°C, it pairs perfectly with stews and red meats, enhancing heartier dishes with its generous intensity.
Where it comes from
This organic and vegan wine originates in Southern Italy, in the region of Puglia. The vineyards rest on clay-limestone soils situated between 100 and 350 metres above sea level, altitudes that ensure complete and balanced ripening. The vines are cultivated using a single Guyot training system. These specific soil and climate conditions highlight the area's vocation for producing wines with a mature profile and deep colour intensity.
How it is produced
Harvesting takes place between late September and mid-October. To maximise flavour concentration, the technique of partial drying of the grapes is applied in temperature-controlled rooms. Ageing takes place exclusively in stainless steel tanks, without the use of barrels, to preserve the primary integrity of the fruit and the clear notes of jam. This careful and respectful approach to the raw material ensures the wine has excellent ageing potential.
