Sous les Trous is an artisan Blanc de Noirs Champagne crafted by Alexandre Grimee, an authentic expression of Pinot Meunier. The absence of dosage defines its Brut Nature character, delivering a distinctly dry, vibrant sip with refined palate clarity. Produced using the Traditional Method, this zero-dosage sparkling wine enhances the natural characteristics of the grape variety, with no filtration or fining, offering a linear drinking experience, ideal for pairing with raw seafood and sushi.

Where does it come from

This wine originates from the picturesque natural amphitheatre of Bonneil, where the vines benefit from excellent southern exposure. The single plot, planted by the producer's grandparents, is rooted in a unique terroir of the Middle Bartonien. The soil consists of Saint-Ouen limestone and beige marl, a geological matrix that imparts a pronounced mineral drive to the glass. This precise synergy between microclimate and land shapes the distinctive profile of the Champagne, highlighting the qualities of Pinot Meunier.

How is it produced

After harvest, the grapes undergo precise vinification in stainless steel, avoiding any blending between different vats or vintages. The wine then matures in oak barrels, gaining aromatic complexity before the secondary fermentation, which is carried out strictly according to the Traditional Method. Presented as a Brut Nature, this sparkling wine undergoes no dosage, fining or filtration. From this winery
Alexandre Grimée, just 18 years old, decides that he will make a Champagne from that little less than an hectare he had borrowed from his family. The vineyard is in Bonneil, just a few rows of a south-facing plot called Sous Les Trous, planted in 1973, of only Pinot Meunier.

In the winery Alexandre has chosen to vinify and refine in steel in order to make the micro identity of that much guarded grape speak for itself, preserving the absolute freshness that emerges clearly from the subsoil. The aging in the bottle is rather long, just to give the shape, the curves, to the cuvée.
