Originating from the coastal town of Akashi in the Hyogo Prefecture, this Sake reflects brewing expertise dating back to 1918. It is crafted exclusively using local Gohyakumangoku Sake rice, chosen to ensure a clean and beautifully defined profile. This regional identity shines through its clear appearance and a focused palate that remains highly approachable. The technical approach by Akashi-Tai results in a beverage that gracefully complements traditional Japanese cuisine, such as sushi and shellfish, while pairing elegantly with modern international meat dishes.

Production process

The brewing process involves careful fermentation and maturation, relying on high-quality rice, rice koji, and water. Crucial to the Tokubetsu Honjozo classification, a small amount of distilled alcohol is added prior to filtration to elevate the flavours and extend the finish. The grain undergoes precise polishing to achieve a 60% rice milling rate, securing the purity of the base ingredient. To preserve its delicate sensory qualities, this Sake should be stored in a cool, dark place at 10–17°C. Once opened, it is best to consume within two weeks for the optimal tasting experience.
