The Sylvaner from Abbazia di Novacella is a still white wine with the Alto Adige Valle Isarco Denomination of Controlled Origin, produced through fermentation and ageing in steel and oak barrels. This wine combines a fresh and mineral profile with excellent structure. On the palate and nose, it releases fruity notes of ripe pear, apple and melon. Tasting reveals a juicy and persistent finish, enhanced by a creamy nuance that lends great balance to the drink. Where it comes from
It originates in South Tyrol, in the Isarco Valley, among the vineyards surrounding the Abbey of Novacella. This wine-growing area, located in the Bressanone basin, is considered one of the northernmost in Italy. The vines grow on sunny slopes at mountain altitudes. The particular composition of the moraine-origin soils, enriched with silty-sandy gravel and quartzite, imparts a distinct mineral character to the wine. The cool pre-Alpine climate encourages the slow ripening of the Sylvaner grapes, ensuring remarkable aromatic precision.
How it is produced
The harvest takes place in October. Temperature-controlled fermentation is carried out using natural and selected yeasts. Part of the must matures in stainless steel tanks, while the remaining portion rests in large oak barrels. This technical choice adds complexity while preserving the varietal character of the Sylvaner. The ageing phase continues in wood, ensuring a perfect integration between the clear fruity tones and the vibrant minerality. The result is a direct, well-structured white wine of notable finesse.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.
A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.
