How is it produced
The production process is characterised by a rigorous artisanal approach at every stage, starting with a careful selection of the grapes. The white vinification involves gentle pressing of the bunches and a first controlled fermentation in stainless steel tanks. Subsequently, the wine undergoes secondary fermentation in the bottle according to the principles of the Traditional Method, gaining complexity through an extended ageing on the lees for at least twenty months. This meticulous process results in a dry and persistent sip, enlivened by fragrant hints of bread crust and supported by a continuous and satisfying stream of bubbles.
