Vinification The term 'ripasso' is a historical and unique Valpolicella winemaking technique that consists of macerating Valpolicella wine on the marc (from dried grapes) previously used for the production of Amarone or Recioto. The purpose of this process is to add softness, complexity and body to the wine.
Ageing This is followed by an extended period of ageing in medium-sized Slovenian oak barrels.
