The nose denotes intense, clean, pleasing and refined aromas that start with hints of cherry, raspberry and strawberry followed by aromas of pear, rose and cyclamen.

Flavour

The mouth has good correspondence to the nose, an effervescent and crisp attack but balanced by alcohol. Good body, intense flavours.The finish is persistent with flavours of cherry, raspberry and strawberry.

Pairing

Excellent as an aperitif, but also a faithful companion of cheeses, meats and fish dishes.

Production technique The pressing of the grapes and Lambrusco pinot noir grapes gives a must with a slightly pink color. After a temperature-controlled fermentation it rests until December to January so that it can cleanse naturally the impure substances. After it is put in isobaric temperature controlled tanks where fermentation takes place (Martinotti method). This latter operation lasts about 2 months before sterile filtration and bottling.
Vinification Light contact with the skins on the must.
