Vinification |
After careful selection of the berries, soft pressing and static racking, the fermenta- tion process for Sauvignon Bianco takes place in small acacia barriques, the fermenting mass is frequently stirred. The Chardonnay is fermented in steel tanks; both varietals are kept at a controlled temperature. |
Ageing |
Chardonnay 3 months in steel, Sauvignon Bianco 3 months in acacia barriques and then 3 months in bottle. |
Pairing |
A structured wine, it goes well with white meats, cold cuts, fish dishes and fresh cheeses. |
