Where it comes from
This wine originates from the Ravera vineyard in Novello, within the Barolo production area, on a hillside at around four hundred metres altitude with a west and south-west exposure. The calcareous-clay soil, enriched by the marls of Sant’Agata, gives a compact texture. The synergy between altitude and exposure supports the development of pronounced aromatic finesse in the grapes. Sustainable farming practices enhance the value of the Piedmontese terroir, translating the characteristics of this hillside into an authentic sensory profile.
How it is produced
Vinification begins with alcoholic fermentation in steel tanks with regular pumping over. The process includes rigorous cold macerations before and after fermentation using the submerged cap technique. Subsequently, the wine undergoes a slow malolactic fermentation in barrels, resting on the lees for over two years without racking. The long maturation in large barrels continues for about thirty months. This meticulous management in the cellar ensures exemplary structural balance, blending solidity and grace in a single tasting.
