Merlot Perilla is a still red wine that precisely expresses the character of the Merlot grapes cultivated by Venica. The agricultural work is overseen by Venica, an estate that has been cultivating the land since 1930, working across forty hectares. The agronomic approach is based on strict sustainability principles, adopting organic farming methods that respect the vine's natural balance. How it is produced

Vinification begins with spontaneous fermentations triggered by indigenous yeasts, allowing for long and gentle extractions. The must remains in contact with the skins for twenty days, enriching itself with colour and flavour intensity. Subsequently, the wine matures for twelve months in French barrels, using a small proportion of new wood to integrate the oak aromas without overpowering the varietal fruit. To preserve its absolute structural purity, the wine reaches its final form without filtration, delivering a full and textured sip.
