What kind of wine it is

Santus Franciacorta Dosaggio Zero is a sparkling wine of great purity, created from a blend of Chardonnay and Pinot Noir. Produced using the Traditional Method, it displays a bright yellow colour enlivened by a fine and persistent perlage. The bouquet reveals clear aromas of apple, pear and white flowers, which develop into notes of bread crust and honey. The absence of added sugars enhances a sharp freshness, offering an austere and savoury sip, ideal for pairing with oysters, raw seafood and mature cheeses.

Where it comes from

The roots of this wine lie in the hills of Franciacorta, in Lombardy. The organically managed vineyards are situated on fluvio-glacial moraine soils rich in minerals. The parcels selected by Santus ensure optimal ripening, capable of preserving the pronounced acidity of the grapes. This unique terroir is expressed with great precision in the glass, giving the sip a vibrant savoury texture and a distinct mineral imprint that define its style and structural elegance.

How it is produced

The grapes are harvested by hand and gently pressed. After the first fermentation in steel, part of the wine rests in wooden barrels. The subsequent prise de mousse strictly follows the principles of the Traditional Method, involving a long ageing on the lees of at least thirty months to ensure maximum complexity. The choice of zero dosage at disgorgement delivers a pure and authentic expression, preserving the natural tension of the sparkling wine and its most rigorous character.

In 1995, agronomists Maria Luisa Santus and Gianfranco Pagano took up the challenge of devoting themselves full-time to winegrowing in the Franciacorta region, making use of advanced scientific know-how. Their goal was to produce exclusively Franciacorta wine.

In the space of three years, they planted about 60.000 vines over an area of 10 hectares and they now take personally care of vineyard management.

The Santus philosophy is based on the firm belief that a small wine grower’s mission must be to protect nature’s diversity and its many nuances, by rejecting standardization in any form.

In order to emphasize the strong vine-climate-terroir bond, no cuvée wines are produced and only single-vintage wines are bottled.
Harvesting occurs quite late into the season, giving all Franciacorta Santus wines a mineral character, complexity and structure combined with great drinkability.
