Description
What kind of wine it is
The Produttori del Barbaresco Barbaresco Pajè Riserva is a still red wine made exclusively from Nebbiolo grapes. Produced in the renowned Barbaresco area, it flawlessly combines structure and precision. On the palate, it stands out for its balanced acidity and rich, chalky tannins, which give depth and character to the tasting experience. Its austere nature is accompanied by an elegant and persistent style, ideal for supporting a long ageing process over time.
Where it comes from
This red originates in the municipality of Barbaresco, at the heart of a Piedmontese region with an extraordinary winemaking vocation. The grapes ripen in the Pajè subzone, valued for its limestone soils enriched with sandy veins. This particular geological formation shapes a wine with a pronounced structural component and a long-lasting flavour progression. The expression bears the hallmark of Produttori del Barbaresco, a cooperative that brings together the work and dedication of over fifty winegrowing families.
How it is produced
After meticulous hand harvesting, the grapes ferment in stainless steel containers at a controlled temperature. The prolonged maceration of 24 days includes frequent pump-overs, an essential technique for extracting phenolic compounds and shaping the body of the wine. This is followed by 36 months of ageing in large oak barrels, with an additional period of rest before release. The glass, with its cherry-red hue, opens up to a precise bouquet, with clear notes of cherry stone, leather, wilted rose and hints of soy sauce.
