On the palate, strawberry dominates, balanced by fresh acidity and a firm tannic structure. The finish is taut and persistent, with hints of red apple peel. It expresses itself best after proper decanting, served alongside fresh pasta dishes, red meats, game or mature cheeses.
Where it comes from
This wine originates in the heart of the Barbaresco area, where the vineyards of the renowned Asili subzone impart extraordinary finesse. The roots sink into a calcareous soil characterised by sandy veins, a geological composition that gives the sip a distinct mineral perception and shapes its framework. The identity of this hilly territory clearly emerges in the flavour profile, outlining a deep sip that is highly representative of its area of origin.
How it is produced
The manual harvest takes place in autumn, with the grapes collected in small baskets. In the cellar, the must ferments in stainless steel containers with a twenty-four day maceration on the skins. During this phase, frequent pump-overs ensure optimal phenolic extraction. This is followed by thirty-six months of ageing in large oak barrels, before concluding the process with a further eighteen months of maturation to achieve perfect structural balance.
