Where it comes from
The grapes are grown in the Le Sondraie vineyard, located in Castagneto Carducci near the Fossa Camilla. At twenty-five metres above sea level with a western exposure, the rows fully benefit from the coastal Mediterranean climate. The deep soils, composed of sand, gravel and clay, allow for complete and harmonious ripening. The high planting density with Guyot training encourages excellent aromatic concentration in the bunches. This agronomic combination gives the wine its distinct savoury character, a direct and faithful expression of the Tuscan terroir.
How it is produced
Vinification begins with gentle pressing of whole, chilled bunches, essential for preserving the original aromas. This is followed by skin maceration at a controlled temperature to extract the finest components of the Vermentino. Fermentation takes place in steel tanks for twenty-five days, ensuring strict varietal precision. Maturation continues on fine lees with regular bâtonnage until the following summer. A residual sugar of 2.5 g/L and a total acidity of 5.75 g/L balance the sip, consolidating a broad and persistent texture.
